Serves

2

Ingredients

  • 2 corn cobs
  • 1 tbsp butter
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ¼ tsp black pepper
  • ¼ tsp onion powder
  • ¼ tsp chilli powder

Method

  1. 1

Remove the husks from the corn cobs. Using a sharp knife and a cutting board, carefully cut each cob in half crosswise, then cut each half into quarters lengthwise to create the corn ribs.

  2. 2

Melt butter in a small bowl. Add olive oil, salt, garlic powder, paprika, black pepper, onion powder and chilli powder. Mix until well combined.

  3. 3

Brush the seasoning mixture evenly over all the corn ribs with a pastry brush, making sure they're well coated.

  4. 4

Preheat the air fryer to 400°F (200°C). Arrange the corn ribs in a single layer and air fry for 12-15 minutes, turning halfway through, until tender and lightly golden.

  5. 5

For extra-crispy corn ribs, cook them for a few extra minutes, keeping an eye on them to prevent burning.

  6. 6

Serve immediately while hot and crispy.

Notes

  • Oven method: Preheat the oven to 400°F ( 200°C). Arrange the seasoned corn ribs on a lined baking tray and bake for about 20-25 minutes, turning halfway, until tender and golden. For extra crispy edges, finish under the grill (broiler) for a couple of minutes, watching closely.
  • Corn cobs can be tough to cut, so use a sturdy, sharp knife and a stable cutting board.
  • Cook in batches if needed so the corn ribs aren't overcrowded and cook evenly.
  • Best enjoyed hot, straight from the air fryer or oven.
