Ingredients
- 1 1/2 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp mirin
- 1 tbsp cornflour
- 3 tbsp water
- 1 small onion
- 1 carrot
- 100g canned water chestnuts, drained
- 5 mushrooms
- 1 garlic, minced
- ½ tsp ginger, grated
- 400g pork mince
- lettuce leaves
- spring onions, sliced
- peanuts, chopped
Method
- 1
In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, mirin, cornflour and water until combined. Set aside.
- 2
Finely chop small onion, carrot, canned water chestnuts and mushrooms.
- 3
In a large pan over medium heat, sauté garlic and ginger until fragrant.
- 4
Add the onion and cook until softened, then add pork mince. Break it up and cook until browned.
- 5
Stir in the carrot, water chestnuts and mushrooms and cook until slightly softened.
- 6
Give the sauce a quick stir, then pour it into the pan. Simmer, stirring, until the sauce thickens and coats the filling.
- 7
Spoon the filling into lettuce leaves and sprinkle with spring onions and peanuts.
Notes
- Iceberg or butter lettuce leaves work well, since they hold their cup shape.
